Bagalabath (Rice and Vermicelli)
Few things are more boring than curd rice. Bagalabath is a tastier form of curd rice.
Bagalabath (with rice) :-
ingredients :
Rice (preferably short grain pudding rice) - 1 cup
milk - 2 cups
Yogurt - as required
A knob of butter and salt as required.
Fried Cashew nuts, pomegranate, green grapes, finely chopped raw mango and chopped coriander leaves for garnishing.
chopped green chillis, grated ginger, mustard, urid dhal, hing and curry leaves for seasoning.
Pressure cook 1 cup of rice with 2 cups of milk. Allow the cooked rice to cool then add curd in small potions and butter. Then comes the seasoning and garnishing as mentioned above. It should be noted that 1 cup of rice when cooked with milk and mixed with curd could yield a huge quantity, much more than what would be expected when plain rice is mixed with curd.
Vermicelli Bagalabath:-
A cup of vermicelli is to be fried in a pan with little oil until it turns golden brown. Then a cup of water and a cup of milk and until the vermicelli sticks turn tender. (Note not to overcook, as that would crush the sticks while mixing). Seasoning and garnishing as mentioned above.

bubbles - after my post u know my probable feelings about curd rice !! :) though it's true that i prefer bagalabath to plain curd rice! i've never tried cooking the rice in milk, i probably wont make it myself but the next time anyone is planning this dish, i'll make the suggestion ....

BTW WIAN makes lovely curd rice and almost once a week I have it with her :)
Confused about one point. Are you supposed to mix the curd rice and vermicelli? Or are supposed to eat seperately?
An SI friend of mine used to make curd rice as you have detailed, and I can vouch for how absolutely yummy it was.
In the heat of these days, curd rice is like manna.

even though i dont really love curd rice, i find it as a healthy finish to any good meal. I dont cook rice in milk but yes i heard that it tastes better that ways.
When i carry curd rice to office, while mixing curd in rice i add only a spoon of it so that by noon its not too sour.

the whole recipe could be made either with rice (which is cooked in the pressure cooker) OR with vermicelli (which u cook in the skillet)
WIAN :) sigh am missing those good ol days when food gets shared wth friends :(
and just like u , i just need to end a meal with curd rice. programmed that way.
